Color: Light green with a clear, soft hue — not overly vivid.
Flavor: Steamed young grass and cooked green vegetables, with subtle hints of roasted rice and white beans. The taste is gentle, with a light and fleeting finish.
Umami: Mild and noticeable, but not rich.
Sweetness: Thin, pleasant after-sweetness that doesn’t linger.
Bitterness/Astringency: Slight bitterness on the tip of the tongue if prepared strong, but fades quickly.
Texture: Moderately fine — should be well-sifted for even dissolution. Foam is moderate when whisked properly.
