Kanbayashi Shunsho – Goku Mukashi

Color: Deep jade green with a dense, smooth liquor and ultra-fine powder.
Flavor: Steamed young grass, white beans, subtle kombu seaweed, and a hint of glutinous rice. Rich and rounded taste with a sweet, lingering finish.
Umami: Very pronounced — full and even, creating a satisfying, layered mouthfeel.
Sweetness: Natural sweetness that is mellow and long-lasting without sharpness.
Bitterness/Astringency: Almost none, even in thick preparation.
Fineness: Ultra-fine powder dissolves completely, producing dense, stable mousse-like foam.
