Kanbayashi Shunsho – Zuiho

Color: Deep jade green with a smooth, clear liquor and ultra-fine powder.
Flavor: Steamed young grass, white beans, light kombu seaweed, and hints of roasted rice. Rounded taste, slightly creamy, with a clean, soft finish.
Umami: Very pronounced — moderately rich, spreads evenly, creating a full, pleasant mouthfeel.
Sweetness: Natural sweetness that lingers gently without sharpness.
Bitterness/Astringency: Almost none, even when whisked thick.
Fineness: Ultra-fine powder that dissolves fully and produces stable, mousse-like foam.
