Kanbayashi Sunsho – Hashidate no Mukashi

Color: Deep jade green with a smooth liquor and ultra-fine powder.
Flavor: Steamed young grass, white beans, light kombu seaweed, and a hint of glutinous rice. Rich, rounded taste with a deep, smooth finish.
Umami: Very pronounced rich, spreads evenly across the palate, leaving a long-lasting umami sweetness.
Sweetness: Naturally bold sweetness that lingers softly and feels mellow.
Bitterness/Astringency: Almost none, even when prepared thick.
Fineness: Ultra-fine powder, dissolves completely, produces smooth, stable mousse-like foam when properly whisked.
