Color: Bright green with a slight yellow tint.
Flavor: Steamed tender greens and young leaves, with a mild astringency at the front and a light sweetness in the finish.
Umami: Light, just enough to notice.
Sweetness: Thin and subtle in the aftertaste.
Bitterness/Astringency: Mild, not harsh.
Texture: Moderately fine; best sifted for an even, smooth whisk.
