Hekisuien – Matsu no Midori

Color: Medium-deep jade green with a smooth, dense liquor.
Flavor: Fresh steamed grass, white beans, a hint of dried seaweed, and light glutinous rice. Rounded, clean taste with a soft finish.
Umami: Very pronounced — moderately rich, spreading evenly across the palate without harshness.
Sweetness: Naturally gentle sweetness that lingers lightly.
Bitterness/Astringency: Very mild when prepared strong; dissipates quickly without clinging.
Fineness: Ultra-fine powder, easy to sift, dissolves completely, produces smooth, beautiful foam.
