Kanbayashi Sunsho – Kashin no Mukashi

Color: Medium-deep jade green with a smooth liquor and very fine powder.
Flavor: Steamed young grass, white beans, light kombu seaweed, and a touch of glutinous rice. Rounded, gentle taste with a clean finish.
Umami: Distinct moderately rich, spreads evenly without harshness.
Sweetness: Naturally soft sweetness that feels light and pleasant.
Bitterness/Astringency: Very mild when prepared strong; dissipates quickly without clinging.
Fineness: Ultra-fine powder, dissolves completely, produces smooth, mousse-like foam when properly whisked.
