Ishimoto Kawaguchiken – Nishiki no Mori (錦の森)
Color: Medium-deep jade green, with a thick, velvety liquor and evenly colored powder.
Flavor: Steamed fresh greens, soybeans, hints of seaweed and roasted grains. Rich with layered complexity and a smooth, rounded finish.
Umami: Very prominent – deep and evenly spread, never harsh.
Sweetness: Bold, lingering sweetness that softens the palate.
Bitterness/Astringency: Nearly absent, even in stronger preparations.
Texture: Super fine, dissolves effortlessly, with a mousse-like, stable foam.
