Ishimoto Kawaguchiken – Wako
Color: Deep jade green, rich and smooth liquor.
Flavor: Steamed white beans, steamed grass, a touch of kombu, and a hint of glutinous rice. The flavor opens round, builds in depth mid-palate, and finishes with a classic, layered aftertaste.
Umami: Very rich – spreads evenly and lingers long, especially in strong usucha.
Sweetness: Clear and lasting sweet aftertaste – mellow, not sharp.
Bitterness/Astringency: A slight touch on the tip of the tongue if brewed strong, but fades quickly and doesn’t dry the mouth.
Fineness: Ultra-fine powder, dissolves completely, forms mousse-like foam with proper whisking.
