Kanbayashi Shunsho – Goun no Shiro

Color: Medium-bright jade green with a fresh, smooth liquor and evenly fine powder.
Flavor: Steamed young grass, white beans, subtle glutinous rice, and a hint of dried seaweed. Mild, soft taste with a clean finish.
Umami: Moderate — clear and balanced, not too heavy.
Sweetness: Naturally light sweetness, smooth and pleasant without sharpness.
Bitterness/Astringency: Very mild when prepared strong; dissipates quickly without clinging.
Fineness: Good fineness, dissolves evenly, produces smooth foam when whisked properly.
